5 layer dip




What should I do with leftover re fried beans? Make a 5 layer dip I guess...that's what I had on hand in the frig anyway!  

5 layer dip

refried beans
sour cream
cheddar cheese
sliced black olives
sliced green onions ( I just used some chopped yellow onion)

Spoon the refried beans on a plate. Top with sour cream, shredded cheddar, olives, and onions. Serve with tortilla chips.

Chili Meatloaf






Here's another great meatloaf recipe...... I found this one at Taste of Home.

We like chili sauce, so I thought this would be fun to try. I served it with twice baked potatoes and green beans.

It was GREAT!






Chile sauce meatloaf
Taste of Home

  • 1/3 cup plus 2 tablespoons chili sauce, divided
  • 1 egg white
  • 1 tablespoon Worcestershire sauce
  • 3/4 cup quick-cooking oats
  • 3/4 cup finely chopped onion
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1-1/2 pounds lean ground beef

  • Combine 1/3 cup chili sauce, egg white,
  • Worcestershire sauce, oats, onion, garlic, salt and pepper.
  • Add to beef, mix well, and shape into a loaf. Place in a greased loaf pan and bake at 350 for 50 minutes. Brush with remaining chili sauce. Bake 5-10 minutes longer,let stand 10 minutes until serving.

Special Turkey Sandwhich


I love sandwiches for lunch, but sometimes it does get a bit boring. Jazzing up deli turkey with mustard and cranberries sure does the trick. Add some melted cheese, and you have one delicious sammy!






Special Turkey Sandwich

4 slices bread, lightly toasted
2 teaspoons djon mustard
2 slices cranberry sauce
thinly sliced deli turkey
2 slices cheese, your choice

Spread the mustard on 2 slices of the  toasted bread, top with cranberries, turkey and cheese. Place under broiler until cheese is melted. Top with the other 2 slices of toast.(serves 2)

PB and yogurt dip..pinned it and tried it


Hmmmm. I kinda wondered about this when I saw it. Yogurt and peanut butter? What would that combo be like? Of course I HAD to pin it and try it. I was just too curious.

It was a delightful surprise!

So creamy, delicious,  and just perfect with apples. I didn't use as much peanut butter as suggested, and  it still had plenty of PB flavor. A great snack anytime of the day!




Peanut butter and yogurt dip

1 c. Greek plain yogurt
1/2 c. peanut butter

Mix well. Serve with fruit of your choice.

Veggie Pizza



I think most people have a favorite recipe they like for veggie pizza, I know I do. But this time I bought some Hidden Valley Ranch "Dill" in a packet and used that instead of the regular. It was really good, the added  dill really made it taste great. I used all low fat products, and would definitely make this again.

 I don't know how long they have been making the HV dill product, but I'm glad I found it. I want to make it into the salad dressing and dip, too. 

I served this to my friends and we had no trouble eating it for both lunch and dinner!


2 (8 oz.) packages of refrigerated crescent rolls (low fat)
1 c. sour cream (low fat)
1 (8 oz.) cream cheese, softened ( low fat)
1 package dry Hidden valley ranch dressing mix (I used the dill)
chopped carrots
chopped peppers
chopped broccoli
chopped cauliflower
chopped onion
sliced black olives
shredded cheddar cheese

Spread the crescent dough into an ungreased jelly roll pan. Bake according to directions, watching until lightly browned. Remove and cool completely.

Mix the cream cheese and sour cream with the packet of Hidden Valley.Spread onto the crescent layer. Add chopped veggies and olives. Sprinkle with cheese. Refrigerate until serving.

Broccoli Cauliflower salad



This classic old recipe is a good one for potlucks as it makes a large salad. I like to add a bit more Parmesan cheese...and top it all with more bacon. 

It's a good, tasty, basic recipe to feed a crowd!



Broccoli Cauliflower Salad

1 head broccoli
                                                                      1 head cauliflower
                                                                       1 med. onion 
                                                                     1/2 c. bacon bits
1/4 c. Parmesan cheese, grated
2 c. salad dressing

Chop broccoli and cauliflower into bite-size florets. Mince onion and add to broccoli mixture. Stir in bacon bits. Stir together salad dressing and Parmesan cheese and mix into salad.

Paula's Margherita Grilled Cheese Sammy



I saw this sammy in Paula Deen's March/April magazine. My daughter and son-in-law give me the magazine each year for Mother's day, and I always look forward to when it shows up in my mailbox. I found several recipes to try in this issue, and this was the first one I made.

I cut down the recipe to just make a few sammy's, and it was really good. The basil and 3 types of cheeses really added a different twist on a classic grilled cheese!




Margherita Gridded Cheese Sammy
Paula Deen

1 (8 oz.) cream cheese, softened
1 c. shredded mozzarella
1/2 c. shredded Parmesan cheese
3 Tbsp. freshly sliced basil
1/2 tsp. pepper
12 slices of bread
1 large tomato, thinly sliced
1/2 c. butter, softened

Combine the cream cheese, mozzarella, Parmesan, basil and pepper. Spread on 6 slices of bread. Top with tomatoes, then the other 6 slices of bread. Spread butter on both slices of bread and cook 3 minutes each side until golden brown.
